After the careful pressing of the grapes, half of the juice was fermented in stainless steel tanks under strict temperature control, preserving freshness and pure fruit. The other half received a nobler treatment: fermentation in 100% new, light-toast French oak barrels crafted by the renowned François Frères Tonnellerie in Burgundy, adding finesse and subtle spiciness. Immediately after alcoholic fermentation, malolactic conversion took place, giving the wine roundness and softness. For eight months it matured partly in stainless steel and partly in oak barrels, in a harmonious interplay of minerality and woody nuances. Following the tirage, the second fermentation in bottle bestowed upon the wine its sparkling soul. It then rested 12 months sur lattes, until disgorgement revealed its elegant and refined character.
