100% Sauvignon. Aromatic nose with lots of green keys such as lime, green apple, freshly cut grass and spine berry. After a nice ripe start, it keeps freshness and structure on the palate. A lot of fruit with a classic style. Long, dry and fairly intense finish.
Excellent with different cheeses such as Brie, Ricotta, Feta, Parmezan and of course the local delicacy: Crottin de Chavignol (Goat Cheese)! But also with shellfish, raw fish or carpaccio, king crab and other fine fish dishes.

Warm temperate climate with regular precipitation. Rain falls even in the driest period.

The soil of Chavignol is dominated by the famous limestone and clay deposits from the Kimmeridgian era. The same substrate that also ensures a fresh and mineral character in Chablis.
- vinification

The grapes are picked by hand. Fermentation on natural yeasts at controlled temperature in stainless steel. No malolactic fermentation or wood aging. After a short ripening in the bottle, the wine is available for consuming.
